4 cans minced clams
2 bottles clam juice
4 large potatoes, diced
1 onion chopped
2 tablespoons butter or bacon fat
1 quart milk
salt and pepper to taste
In stock pot saute onions in butter or bacon fat. when soft and translucent add potatoes and clam broth. Cook 15 20 minutes until softening. add clams, juice and all, and reduce heat to low. cook until potatoes are fork tender. Add milk and heat through. Add salt and pepper and serve.
