2 lbs Langostino tails
1 lb lump crab meat
1 cup chopped onion
2 Tablespoons dried chives
2 Tablespoons lemon juice
3+ cups of bread crumbs
1 cup mayonaisse
1 Tablespoon salt
1 1/2 Tablespoons black pepper
thoroughly mix ingredients together being gentle so the lump crab stays together. You may need to add more bread crumbs if it is too wet or more mayo or another egg if not moist enough to stay together.
Shape into patties and pan fry like a burger on the stove top. You can also grill them but use a layer of foil to keep them from falling through the grates. Cook about 6 minutes on each side or until firm.
I purchased a Cuisinart Electric Pressure Cooker at Bed Bath and Beyond. The price was $99. After my 20% coupon and added tax, it cost a total of $84. I had been at my friends house and saw how easy it is to use and how very quickly it had soup prepared. A soup that had dry beans in it. i went out to purchase one the next day. This was my first attempt at a meal and I am floored and wondering why I didn’t know about this fabulous machine before!
6 Boneless Skinless Chicken thighs
1 cup chopped onion
1/2 cup chopped celery
2 Tablespoons oil
1 1/2 cups Jasmine Rice (uncooked)
3 Cups Chicken Broth
Salt and pepper to taste
Saute Chicken, onions and celery in the oil for 5 minutes. It does not have to be cooked through. (my electric pressure cooker has a saute option to reduce dirty pans!) Add rice and broth and seasoning.
Secure the top on the pressure cooker. Cook on high pressure for 9 minutes. Really, only 9 minutes! Release pressure and enjoy!
1/2 white onion, chopped
2 lbs ground beef
1 pkg taco seasoning
1/2 cup water
1 can refried beans
3 cups shredded cheese
2 cups brown rice
1 bottle enchilada sauce or a jar of salsa
prepare rice with 4 cups water, set aside.
saute onions until soft, add burger, cook until no longer pink, breaking up any big chunks. add seasoming and water. reduce heat simmer for 10 minutes. Add enchilada sauce and mix.
in a 13 x 9 pan, spread refried beans, spread rice on beans, add seasoned beef, spread evenly and sprinkle with cheese.
Bake for 30 – 40 minutes until cheese is melted.
Serve with sour cream, lettuce and tomato and tortilla chips.
3 Tablespoons oil
3 Tablespoons coconut oil
1 2/3 cups uncooked rice
2 1/2 teaspoons salt
1/2 teaspoon ground cumin
1/2 teaspoon black pepper
4 cups chicken broth
2 chicken boullion cubes
1 can tomato sauce
2 teaspoons ground jalapeno or ceyenne pepper (or to taste )
Heat oil in a saucepan over medium heat. Cook and stir rice and onion in the hot oil until browned; season with salt, cumin, and pepper. Pour broth over the rice mixture and boullion cubes. Stir in tomato sauce. lace a cover on the saucepan, increase to medium-hot and bring to a boil. Add ground hot pepper and continue cooking at a boil for 10 minutes. Reduce heat to medium-low until the rice is tender and the broth is absorbed, 15 to 20 minutes more. Serve hot. 6 generous helpings.
3 cups chicken broth
3/4 cup grits (not instant)
1 cup shredded cheddar cheese
Boil broth, add grits and stir with a whisk. Cover and remove from heat. Let sit 10 minutes or until broth is absorbed ( stir when you remove lid to check) Add cheese and stir until all mixed up.
3 Chicken breasts cut into bit sized pieces
3 tablespoons coconut oil ( or other preferred oil)
1/2 cup white wine (optional)
1/2 cup chicken broth
3/4 pound proscuitto sliced and cut into pieces
1/2 pound swiss cheese, sliced
saute chicken in oil. add proscuitto toward end to heat up. Pour in wine (if using) and broth. salt and pepper to taste and simmer covered on low for 15 minutes. cover top with swiss, re-cover, turn off heat to let cheese melt. Serve hot
I head of cauliflower, cut into flowerets
1 cup chicken broth, canned or home made
Pour ingredients in medium to large sauce pan. Heat over med to high heat. Cook to desired firmness. Serve with butter and pepper
3 cups of whole wheat flour
2 teaspoons baking soda
1/2 teaspoon baking powder
1 1/2 teaspoons salt
3 teaspoons pumpkin pie spice
1 cup sugar
2 cups pumpkin
1/2 cup heavy cream + 1/2 2% milk OR 1 cup milk
In a large bowl mix together all the dry ingredients
make a well in the center and add all the wet ingredients. Mix together until just incorporated. Do not over mix or bread will be tough.
Split between 2 greased loaf pans.
Bake at 350 for 50-60 minutes, until a tester comes out clean
2 pounds ground beef
1 italian sandwich roll frozen then shredded
2 heaping tablespoons garlic paste
1/2 cup shredded Parmesan cheese
heat oven to 350
Combine all ingredients.
Shape into balls
bake in oven for 15 minutes, turn bake 10 minutes more
Remove from pan and drop into cooking spaghetti sauce.
simmer in sauce 2+ hours for flavors to combine.
Bring to boil in a heavy saucepan:
3/4 cup butter
3 cup sugar
3/4 cups heavy (whipping) cream
Let boil for 4 minutes or until candy thermometer reaches 235f. Remove from heat.
11 oz package white chocolate chips
7 oz jar of marshmallow creme
Mix together until all is combined well.
Reserve 1 cup
Then add: 1 1/2 Tablespoons orange extract
12 drops yellow food coloring
5 drops red food coloring
and blend well.
Pour into 13 x 9 baking dish that has been buttered
plop reserved white fudge around top and swirl into orange fudge.
Let cool completely, cut into 1 inch squares.
