16 slices (or so) of thick sliced ‘texas toast’ style bread
12 eggs
1/2 cup milk
4-6 bananas ( depending on size)
2 teaspoons cinnamon ( more if you like it that way)
4 tablespoons ground flax meal or wheat bran (optional)
1/2 cup raisins
Pam or like product
Preheat oven to 350
Coat a 13 x 9 baking dish with Pam. Place one layer of bread along the bottom, slice banana’s (the long way) and add a layer. Sprinkle with 1 teaspoon of cinnamon, mix 6 eggs with half the milk and pour over the top. Place a second layer of bread on top. Sprinkle with raisins and cinnamon, mix remaining eggs and milk pour over the top. Bake for 45 – 60 minutes or until cook through.
If your adding the flax/germ. Sprinkle in the middle with the banana’s,
Serve hot with syrup.
